Algae attract increasing interest in the food industry as they also belong to the “superfoods” due to their high nutrient content. At the same time, caution is advised due to their high iodine content or possible accumulation of undesirable substances.
To help manufacturers bring safe algae to the market, the Working Group Stoffliste in the German Federal Office of Consumer Protection and Food Safety (BVL) complemented its lists of botanicals and fungi with a new compilation on algae. To our best knowledge, this is the first compilation of algae to be used in food.
